Council Requirement’s 2018 are tightening up this year due to pressure across the board to make
sure any food and beverage premises are protected with a Pest and Hygiene programme.
If you are not familiar with the codes and are facing an audit this year there are a few things you need to know:audit
As of March 2017, all food and beverage premises are expected to have a current Food Control Plan or a National Programme. Councils are tightening up this year and business owners are at risk of a closure if their food and hygiene standards are not up to standard.

What to Expect:
If you have not undergone a Food and Hygiene audit before there are
some things to keep in mind and this year councils are tightening up on their regulations and to avoid being caught out we have some
handy tips:

When the council books your premise in for a verification it means that a Council verifier will visit your premise and ask to see your:
Food Control Plan
Staff training records
Temperature Records
Other supporting documents required by the FCP.

How long will the audit take?
A verification can take up to 3 hours. The verifier will ask a lot of questions to help them determine whether the business operator understands the Food Control Plan and is meeting its requirements.
If the Food Control Plan has not been completed (tailored) and the operator has not met the FCP requirements, then the verifier may need to reschedule another visit. An extra visit could mean extra charges. It pays to be prepared!
What Is considered a high standard?
Under Auckland Council’s current food grading and verification processes, the council expects a high standard in cleanliness and a premise being pest free. Currently with the introduction of the new food law you’ll find some businesses are still on the old Food Hygiene Reg and some have moved over to the new law so Council does have a slightly different approach for this.
What if they discover I have a Pest Infestation?

If evidence of an infestation is found during a Council inspection, (under the old law -Food Hygiene Regs) or during a verification, (under the new Food Act 2014) it means the premise can expect to be downgraded to at least a D or even an E grade and Council will strongly consider whether prosecution would be appropriate.

Ultimately this ends up being a costly exercise not only in terms of getting pest control contractors in but more so the additional consequences and Council fees.

An example of the some of the costs would be:

cockroaches_web1) Immediate closure and Food Safety Officer action
2) Immediate downgrade and the grade needs to be displayed upon receipt
3) Charges for a follow up visit to see if the problem has been resolved and any additional site visits required
3) A regrading application fee (if under Food Hygiene Regs) if the premise wants their A grade back –
4) If the business is registered under the Food Act 2014 then Council will increase the number of verifications (cost is approximately $600-00 per verification)
